Ingredients

  • 5g Black Tea & Thyme

  • Fresh thyme sprigs

  • Fine caster sugar

  • 25ml tea syrup

  • 25ml lemon juice

  • Ginger beer

  • Ice

  • Lemon wheel, to garnish

  • Sprig of thyme, to garnish


Method

  1. Brew 5g Black Tea & Thyme with a few sprigs of fresh thyme in 250ml of water at 100°C for 5 minutes.

  2. Strain the tea, add 250g fine caster sugar and stir until fully dissolved. Allow the syrup to cool.

  3. Fill a tall glass with ice, then add 25ml of tea syrup and 25ml of lemon juice.

  4. Top with ginger beer and gently stir to combine.

  5. Garnish with a lemon wheel and a fresh sprig of thyme.
