Fine caster sugar

25ml tea syrup

25ml lemon juice

Method

Brew 5g Black Tea & Thyme with a few sprigs of fresh thyme in 250ml of water at 100°C for 5 minutes.

Strain the tea, add 250g fine caster sugar and stir until fully dissolved. Allow the syrup to cool.

Fill a tall glass with ice, then add 25ml of tea syrup and 25ml of lemon juice.
