Our second recipe is a beautiful salad dreamed up by Deliciously Ella. Gluten and dairy free with wonderful warming spices, this cumin-roasted carrot, red onion and lentil dish makes a perfect light lunch or starter.

Ingredients

For the salad

  • 4 carrots
  • 2 tins of green lentils
  • 2 teaspoons of fennel seeds
  • 2 teaspoons of cumin seeds
  • 70g of watercress
  • 2 red onions
  • 20g of coriander
  • Olive oil
  • 50g of pine nuts

For the cashew cheese

  • 150g of cashew nuts
  • 1 lemon, juiced
  • 1 tablespoon of nutritional yeast
  • Salt and pepper
  • 5 tablespoons of water

 

Cooking Instructions 

  1. 1. Preheat the oven to 180C (fan). 

  2. 2. Peel the carrots and slice them on the diagonal.

  1. 3. Peel the onions and roughly chop them into sixths. 

  2. 4. Place both in a baking tray with the fennel seeds, cumin seeds, a good glug of olive oil and lots of salt and pepper.

  3. 5. Roast in the oven for 30 minutes. 

  4. 6. Heat a pan and dry fry the pine nuts for a few minutes until starting to brown. Leave these aside to cool. 

  5. 7. Blend all the ingredients to make the cashew cheese use a high-speed blender until totally smooth.

  1. 8. When the vegetables are cooked, drain and rinse the lentils and add them to a pan over a gentle heat to warm through slightly. 

  2. 9. Stir in the carrots and onion and along with the seeds and oil from the bottom of the pan. 

  3. 10. Roughly chop the coriander and stir this through the lentils, then season generously with salt and pepper.

  4. 11. Remove the pan from the heat, stir through the watercress and plate up the salad, sprinkling with pine nuts and some generous dollops of cashew cheese before serving.

Cooking tips

In case you want to prepare your own lentils, rinse the lentils under running water to remove any debris and impurities. Soaking lentils for 1-2 hours can reduce the cooking time exponentially. Use vegetable stock to boil lentils in for more flavour.
