When the weather's as good as this, there's only one place to be and that's outside. Whether you're enjoying your drinks iced or hot, a summer afternoon tea is the perfect excuse to spend time with friends and family in the sunshine. We looked to foodie and blogger Madeleine Shaw for a perfect summer recipe to make those al fresco moments a little sweeter. The perfect addition to your favourite cup of tea, this strawberry tart with a healthy twist is a great way to make the most of warm summer days...

Ingredients

Serves 8 For the strawberry tart crust:

  • 150g of walnuts
  • 70g of oats
  • 70g of buckwheat flour or rice flour
  • ½ tsp of baking powder
  • 3 tbsp. of coconut oil
  • 3 tbsp. of honey or maple syrup
  • 1 tsp of vanilla extract

For the strawberry tart filling:

  • 600g Greek  yogurt or  coconut yogurt
  • 1 vanilla pod, scraped
  • 2 tbsp. of honey

For the strawberry tart topping:

  • Fresh  strawberries, sliced
  • Mint leaves
  • Coconut flakes

Directions

Preheat  the oven to 180°C and grease a 23cm baking or pie tin for your strawberry tart crust. Mix  the crust  ingredients together in a food processor. Then, press the crust in the tin and prick the bottom with a fork before popping in the oven. Bake the crust of your strawberry tart for 20 minute s until it's golden. Remove and allow it to cool. Mix the yogurt, vanilla and honey together. Spoon this mixture inside the crust then  top with the strawberries, mint  leaves and a sprinkle of coconut flakes. Enjoy!
